ACK Gioia artisan cheese consists of freshly handmade Mozzarella, Burrata, and Stracciatella.
Mozzarella
Mozzarella is a classic Neapolitan fresh cheese, originally only found in the region of Campania, and is known as “Mozzarella di Bufala” because it is made from freshwater buffalo milk, which contains 10% milk fat. ACK Gioia Mozzarella is made from pasteurized cow’s milk with 4% milk fat, known in Italy as “fior di latte” meaning fresh milk. Because of this, fior di latte mozzarella is milder in flavor. Our cheese contains high moisture content making it best enjoyed fresh, however, you can freeze it to reduce the moisture for cooking purposes. Best served at room temperature.
Burrata

A freak snow storm in Puglia, Italy in the 1950s left a creamery without power. In an effort to preserve and save their fresh cream, they filled mozzarella with the cream. After discovering how delicious this new idea was, burrata was born. With further development, burrata is now typically filled with Stracciatella. When you cut into an ACK Gioia burrata you will see the wonderful stracciatella spill out which makes it perfect on salads, in soups, and for dipping. It’s truly a favorite and best served at room temperature.

Stracciatella pronounced strach-a-tella is made from pulled-apart mozzarella mixed with cream and salt for flavor. You may have heard this word being described as a gelato flavor or even the Stracciatella soup. This is because the root meaning of stracciatella is ribbons so, when you are eating our wonderful stracciatella you will be snacking on ribbons of mozzarella mixed with cream. Our stracciatella is also what you will find as the filling in our burrata. Best served at room temperature.
Cheese Facts & Freshness
ACK Gioia cheese has no preservatives giving them a shelf life of only one week from the date they are made. We strive for the element of freshness and we recommend that when you purchase any of our cheese that it be consumed either that same day or within a few days from the purchase date. ACK Gioia cheese is best served at room temperature. Let them sit on the counter for about an hour depending on the climate, to come back to room temperature.
