A freak snow storm in Puglia, Italy in the 1950s left a creamery without power. In an effort to preserve and save their fresh cream, they filled mozzarella with the cream. After discovering how delicious this new idea was, burrata was born. With further development, burrata is now typically filled with Stracciatella. When you cut into an ACK Gioia burrata you will see the wonderful stracciatella spill out which makes it perfect on salads, in soups, and for dipping. It’s truly a favorite and best served at room temperature.
